In Korea, garlic scapes are by no indicates an uncommon component. Koreans grow a lot of garlic, so garlic scapes are plentiful in spring and used as a veggie for different meals– stir-fried, skilled and blanched, or pickled.
I sometimes mix some scapes into a paste and add it to the grated potatoes to make potato pancakes or to the homemade noodle dough or dumpling dough. It adds a good taste and color to these meals. They truly are versatile!
