Monday: Vegetarian Stuffed Portobello Mushrooms– Serve with a fresh green salad topped with Italian dressing (see benefit recipe). Youll be using the rest of the ricotta and mozzarella cheese in the skillet lasagna, so it will not go to waste.
Benefit: Italian Dressing– Its easy to make your own vinaigrettes and salad dressings. It keeps well in the fridge for up to a week. Take a look at my list of salad dressing dishes.
Friday: Avocado Chicken Salad– Poach chicken or purchase rotisserie chicken. Serve with tortilla chips and salsa. Attempt my dining establishment style salsa or chipotle salsa.
Wednesday: Loaded Mashed Potato Casserole– This dish makes 12 side servings, 1⁄2 cup each. As a main dish, its four generous portions. Serve with a green salad with Italian dressing (see bonus recipe).
Tuesday: Baked Honey Mustard Chicken and Instant Pot Mashed Potatoes– The mashed potatoes recipe makes a big batch. Youll utilize 4 cups for dinner today and conserve the reaming 6 cups of the potatoes for supper tomorrow. Try our slow cooker mashed potatoes if you do not have an Instant Pot. Serve with a vegetable of your option.
Thursday: Easy Skillet Lasagna– This dish makes 8 portions. Leftovers are tasty and reheat well (store the cheese mix independently). The recipe can be cut in half if you choose.
