Thursday: Chunky Cheeseburger Soup– This makes 8 servings. Save the leftovers for another supper or a lunch! We put green onions on the grocery list instead of chives, since they can likewise be utilized to garnish Fridays enchiladas.

Monday: Pasta Amatriciana– This makes 8 servings. Leftovers can be reheated for lunch or another dinner. It freezes well, too. To round out the meal, serve the pasta with a simple green salad (we included it on the grocery list!).

Friday: Chicken Enchiladas Verde– This dish is rather flexible. Optional garnishes: sliced up green onion, sliced red onion, cilantro, jalapeño pepper, avocado, sour cream, fresh tomatoes, etc.

Tuesday: Shrimp Salad with Mango and Avocado– Youll want to double the recipe to make four servings (grocery list shows this). If you have extra jalapeño peppers, cilantro, avocado, and red onion, conserve them to top the enchiladas on Friday, if wanted.

To round out the meal, cook your preferred veggie or buy a bagged salad (we included it on the grocery list).

Wednesday: Roasted Bone in Chicken Breasts and Rosemary Roasted Potatoes– Youre going to make a double batch of these and refrigerate half of the chicken for Fridays supper. Each serving is one half of a chicken breast, about 8 oz. To round out the meal, cook your favorite vegetable or purchase a bagged salad (we included it on the grocery list).

Reward: Whole Wheat Chocolate Chip Cookies– Everyone loves these cookies! The cookies keep well or they can be frozen, too. The dough can likewise be frozen for as much as 2 months so you can bake the cookies as you need them.
